A simple and comforting crockpot chicken noodle soup that’s perfect for any day.
Ingredients

- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 3 cups water
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 2 cups egg noodles
- 1/4 cup fresh parsley, chopped
Instructions
- Place chicken breasts in the crockpot.
- Add chicken broth, water, carrots, celery, onion, garlic, salt, pepper, thyme, and bay leaf.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken, shred it, and return to the crockpot.
- Add egg noodles and cook for an additional 20-30 minutes until noodles are tender.
- Stir in fresh parsley before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze without noodles for best results.
- Add more broth if soup thickens too much.
