- 4 boneless, skinless chicken
- 1 lb fresh mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp cornstarch
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan and brown the chicken on both sides.
- Place the chicken in the crockpot.
- In the same pan, sauté onions and mushrooms until softened.
- Add garlic, thyme, salt, and pepper, then cook for 1 minute.
- Transfer the mushroom mixture to the crockpot.
- Pour in chicken broth and cook on low for 6 hours or high for 3 hours.
- Mix cornstarch with heavy cream and stir into the crockpot.
- Cook for an additional 30 minutes until sauce thickens.
- Serve hot over rice or noodles.
Notes
- For a healthier option, replace heavy cream with Greek yogurt.
- Add extra vegetables like carrots or celery if desired.
- Leftovers can be stored in the fridge for up to 3 days.
