  • 1 lb fresh mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp cornstarch
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and brown the chicken on both sides.
  2. Place the chicken in the crockpot.
  3. In the same pan, sauté onions and mushrooms until softened.
  4. Add garlic, thyme, salt, and pepper, then cook for 1 minute.
  5. Transfer the mushroom mixture to the crockpot.
  6. Pour in chicken broth and cook on low for 6 hours or high for 3 hours.
  7. Mix cornstarch with heavy cream and stir into the crockpot.
  8. Cook for an additional 30 minutes until sauce thickens.
  9. Serve hot over rice or noodles.
