- 2 boneless, skinless chicken , sliced
- 8 oz lo mein noodles
- 1 cup sliced bell peppers
- 1 cup sliced carrots
- 1/2 cup sliced onions
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tsp ginger, grated
- 1/2 tsp black pepper
- 1/4 cup chicken broth
- 2 green onions, sliced (for garnish)
Instructions
- Place chicken, bell peppers, carrots, onions, and garlic in the crockpot.
- In a bowl, mix soy sauce, hoisin sauce, sesame oil, ginger, black pepper, and chicken broth. Pour over the chicken and vegetables.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Cook lo mein noodles according to package instructions. Drain and set aside.
- Once the chicken is cooked, shred it with a fork and mix it back into the sauce.
- Add the cooked noodles to the crockpot and toss to combine.
- Garnish with sliced green onions before serving.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Add more vegetables like broccoli or snap peas if desired.
- Adjust soy sauce to taste if you prefer less salt.
