  • 8 oz lo mein noodles
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 1/2 cup sliced onions
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place chicken, bell peppers, carrots, onions, and garlic in the crockpot.
  2. In a bowl, mix soy sauce, hoisin sauce, sesame oil, ginger, black pepper, and chicken broth. Pour over the chicken and vegetables.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Cook lo mein noodles according to package instructions. Drain and set aside.
  5. Once the chicken is cooked, shred it with a fork and mix it back into the sauce.
  6. Add the cooked noodles to the crockpot and toss to combine.
  7. Garnish with sliced green onions before serving.
