- 2 lbs beef chuck roast, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Place beef chunks at the bottom of the slow cooker.
- Add chopped onion, minced garlic, sliced carrots, and diced potatoes.
- In a small bowl, mix beef broth, tomato paste, salt, pepper, and thyme.
- Pour the mixture over the beef and vegetables.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot.
Notes
- You can add other vegetables like celery or mushrooms.
- For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker 30 minutes before serving.
