Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Place beef chunks at the bottom of the slow cooker.
  2. Add chopped onion, minced garlic, sliced carrots, and diced potatoes.
  3. In a small bowl, mix beef broth, tomato paste, salt, pepper, and thyme.
  4. Pour the mixture over the beef and vegetables.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Serve hot.

Notes

  • You can add other vegetables like celery or mushrooms.
  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker 30 minutes before serving.
