Ingredients

- 1 lb dried beans (pinto, black, or kidney)
- 6 cups water or broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 bay leaf
- Optional: 1 can diced tomatoes
Instructions
- Rinse the beans and pick out any debris.
- Add beans, water or broth, onion, garlic, bell pepper, salt, black pepper, cumin, and bay leaf to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
- Optional: Stir in diced tomatoes in the last hour of cooking.
- Remove bay leaf before serving.
Notes
- Soak beans overnight for faster cooking.
- Adjust seasoning to taste.
- Serve with rice or bread.
