Ingredients

  • 6 cups water or broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 bay leaf
  • Optional: 1 can diced tomatoes

Instructions

  1. Rinse the beans and pick out any debris.
  2. Add beans, water or broth, onion, garlic, bell pepper, salt, black pepper, cumin, and bay leaf to the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
  4. Optional: Stir in diced tomatoes in the last hour of cooking.
  5. Remove bay leaf before serving.
