Ingredients

- 8 oz pasta (your choice)
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cashews, soaked
- 1 cup vegetable broth
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add onions and cook until caramelized (about 15-20 minutes).
- Add minced garlic and cook for 1 minute.
- Blend soaked cashews, vegetable broth, nutritional yeast, salt, pepper, and smoked paprika until smooth.
- Pour the cashew mixture into the pan with onions and garlic. Stir well.
- Add cooked pasta to the sauce and mix until fully coated.
- Serve warm.
Notes
- Soak cashews for at least 2 hours or boil for 10 minutes for a smoother sauce.
- Adjust salt and pepper to taste.
- Store leftovers in an airtight container for up to 3 days.
