Ingredients

- 2 cups jasmine rice
- 1 lb chicken breast, diced
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cilantro, chopped
Instructions
- Heat oil in a large pot over medium heat.
- Add ginger and garlic, sauté for 1 minute.
- Add chicken, cook until browned.
- Stir in rice, curry powder, salt, and pepper.
- Pour in coconut milk and chicken broth, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Fluff rice with a fork, garnish with cilantro.
Notes
- Use full-fat coconut milk for best results.
- Adjust curry powder to taste.
- Let rice rest covered for 5 minutes before serving.
