- 2 boneless, skinless chicken (cut into bite-sized pieces)
- 1 cup jasmine rice (rinsed)
- 1 can (400 ml) coconut milk
- 1 tbsp vegetable oil
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1 tsp ginger (grated)
- 1 tsp turmeric powder
- 1 tsp ground cumin
- 1/2 tsp chili flakes (optional)
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Heat oil in a large pan over medium heat. Add the onion, garlic, and ginger. Sauté for 2 minutes until fragrant.
- Add the chicken pieces and cook until lightly browned, about 5 minutes.
- Stir in the turmeric, cumin, and chili flakes. Cook for another minute.
- Pour in the coconut milk and chicken broth. Bring to a gentle simmer.
- Add the rinsed rice, stir well, and reduce heat to low. Cover and cook for 15-18 minutes, or until the rice is tender and liquid is absorbed.
- Season with salt and pepper. Garnish with fresh cilantro before serving.

- For extra creaminess, use full-fat coconut milk.
- Adjust spice levels by reducing or increasing chili flakes.
