- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 2 cups milk
- 2 cups cheddar cheese, shredded
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add onion and garlic, cooking until softened.
- Pour in chicken broth, potatoes, and carrots. Bring to a boil, then reduce heat and simmer until vegetables are tender.
- In a separate pan, melt butter and whisk in flour to create a roux. Cook for 1-2 minutes.
- Gradually whisk in milk until smooth. Stir this mixture into the soup.
- Add shredded cheese and stir until melted.
- Mix in sour cream and season with salt and pepper.
- Serve hot.
