- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup orange juice
- 1/4 cup vegetable oil
- 1 egg
- 1 tbsp grated orange zest
- 1 1/2 cups fresh cranberries, chopped
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk orange juice, oil, egg, and orange zest.
- Stir wet ingredients into dry ingredients until just combined.
- Fold in cranberries and walnuts.
- Pour batter into the prepared pan and bake for 55-60 minutes, or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- Freeze for longer storage.
- Add a simple glaze with powdered sugar and orange juice for extra sweetness.
