  • 1 tbsp grated orange zest
  • 1 1/2 cups fresh cranberries, chopped
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk orange juice, oil, egg, and orange zest.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Fold in cranberries and walnuts.
  6. Pour batter into the prepared pan and bake for 55-60 minutes, or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.
