- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas, mashed
- 1/2 cup sugar
- 1 egg
- 1/3 cup melted butter
- 1 cup fresh or frozen cranberries
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, mash bananas and mix with sugar, egg, and melted butter.
- Combine wet and dry ingredients gently.
- Fold in cranberries.
- Fill muffin cups 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use ripe bananas for better flavor.
- Do not overmix the batter to keep muffins tender.
- If using frozen cranberries, do not thaw before adding.
