Ingredients

  • 3 ripe bananas, mashed

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time.
  4. Mix in mashed bananas and vanilla.
  5. Gradually add dry ingredients to wet ingredients. Fold in cranberries.
  6. Pour batter into the loaf pan. Bake for 60 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.
