Ingredients

- 1.5 lbs beef stew meat, cubed
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef, carrots, potatoes, onion, and garlic in the crockpot.
- Add beef broth and season with thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Remove the bay leaf before serving.
- Serve hot and enjoy.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes.
- You can add other vegetables like celery or peas.
- Leftovers can be stored in the fridge for up to 3 days.
