Ingredients

- 8 oz pasta of your choice
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 cup unsweetened almond milk
- 2 tbsp nutritional yeast
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add sliced onions and cook until caramelized, about 15 minutes.
- In a blender, combine almond milk, nutritional yeast, cornstarch, garlic powder, and onion powder. Blend until smooth.
- Pour the blended sauce into the pan with caramelized onions. Stir until thickened.
- Add cooked pasta to the pan and toss to coat evenly.
- Season with salt and pepper to taste. Serve warm.
Notes
- Use a non-dairy milk of your choice.
- For extra creaminess, add 1 tbsp of vegan butter.
- Store leftovers in an airtight container for up to 3 days.
