Instructions
- Mix desiccated coconut, icing sugar, and condensed milk in a bowl.
- Add vanilla extract and stir until well combined.
- Divide the mixture in half. Add pink food coloring to one half if desired.
- Press one portion into a lined tray. Smooth the surface.
- Layer the second portion on top and press gently.
- Refrigerate for at least 2 hours or until firm.
- Cut into squares and serve.
