Delicious cinnamon sugar swirl muffins that are perfect for breakfast or a snack.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp melted butter
Instructions
- Preheat oven to 375°F (190°C).
- Mix flour, granulated sugar, baking powder, and salt in a bowl.
- Add milk, oil, egg, and vanilla extract. Stir until combined.
- Fill muffin cups halfway with batter.
- Mix brown sugar and cinnamon in a small bowl.
- Sprinkle cinnamon sugar mixture over batter.
- Top with remaining batter.
- Drizzle melted butter over the tops.
- Bake for 18-20 minutes.
Notes
- Check muffins with a toothpick to ensure they’re done.
- Let cool for 5 minutes before serving.
