- 1 whole turkey or chicken (5–6 kg)
- 2 kg potatoes, peeled and quartered
- 500 g carrots, sliced
- 500 g parsnips, sliced
- 200 g Brussels sprouts
- 100 g butter
- 2 tbsp olive oil
- 1 tbsp rosemary
- 1 tbsp thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 180°C (350°F).
- Season the turkey or chicken with salt, pepper, rosemary, and thyme.
- Place the bird in a roasting tray and cook for 3-4 hours, basting occasionally.
- Boil potatoes for 10 minutes, then roast in olive oil for 45 minutes.
- Steam carrots, parsnips, and Brussels sprouts for 15 minutes.
- Serve hot with gravy and cranberry sauce.
