- 1 whole turkey (5–6 kg)
- 2 kg potatoes
- 500g carrots
- 500g Brussels sprouts
- 200g butter
- 1 tbsp olive oil

- 4 cloves garlic

- 1 tsp thyme
- 1 tsp rosemary
Instructions
- Preheat your oven to 180°C (350°F).
- Season the turkey with salt, pepper, thyme, and rosemary.
- Place the turkey in a roasting pan and cook for 3 hours.
- Peel and chop the potatoes, carrots, and Brussels sprouts.
- Toss the vegetables with olive oil, salt, and pepper.
- Roast the vegetables for 45 minutes.
- Remove the turkey from the oven and let it rest for 20 minutes.
- Serve the roast with the vegetables and gravy.
