Delicious rice dishes perfect for Christmas celebrations.
Ingredients

- 2 cups basmati rice
- 1 cup coconut milk
- 1/2 cup raisins
- 1/2 cup cashews
- 1 tsp cinnamon
- 1 tsp cardamom
- 1/2 tsp cloves
- 3 cups water
- 1 tbsp ghee
- 1/2 tsp salt
Instructions
- Rinse rice until water runs clear.
- Heat ghee in a pot and toast cashews until golden.
- Add spices and stir for 30 seconds.
- Pour in rice, coconut milk, water, and salt.
- Bring to boil, then reduce heat and simmer covered for 15 minutes.
- Remove from heat and let stand for 5 minutes.
- Fluff rice with a fork and mix in raisins.
Notes
- Soak rice for 20 minutes for fluffier texture.
- Adjust spices to your taste.
- Can substitute almonds for cashews.
