Instructions

  1. Rinse rice until water runs clear.
  2. Heat ghee in a pot and toast cashews until golden.
  3. Add spices and stir for 30 seconds.
  4. Pour in rice, coconut milk, water, and salt.
  5. Bring to boil, then reduce heat and simmer covered for 15 minutes.
  6. Remove from heat and let stand for 5 minutes.
  7. Fluff rice with a fork and mix in raisins.
