Ingredients

- 200g raisins
- 200g currants
- 200g sultanas
- 100g chopped dates
- 100g chopped prunes
- 100g mixed peel
- 100g chopped almonds
- 100g breadcrumbs
- 100g plain flour
- 100g brown sugar
- 1 tsp mixed spice
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 100g shredded suet
- 2 eggs
- 150ml stout
- 150ml brandy
Instructions
- Mix all dried fruits, nuts, breadcrumbs, flour, sugar, and spices in a large bowl.
- Add suet and stir well.
- Beat eggs and mix with stout and brandy.
- Pour the liquid into the dry ingredients and stir until combined.
- Cover and leave overnight.
- Grease a pudding basin and fill with the mixture.
- Cover with parchment paper and foil, then steam for 6 hours.
- Store in a cool place until ready to serve.
- Reheat by steaming for 2 hours before serving.
Notes
- Make the pudding at least a month before Christmas for best flavor.
- Store in an airtight container.
- Flame with extra brandy before serving for a festive touch.
