  • 200g sultanas
  • 100g chopped dates
  • 100g chopped prunes
  • 100g mixed peel
  • 100g chopped almonds
  • 100g breadcrumbs
  • 100g plain flour
  • 100g brown sugar
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 100g shredded suet
  • 2 eggs
  • 150ml stout
  • 150ml brandy

Instructions

  1. Mix all dried fruits, nuts, breadcrumbs, flour, sugar, and spices in a large bowl.
  2. Add suet and stir well.
  3. Beat eggs and mix with stout and brandy.
  4. Pour the liquid into the dry ingredients and stir until combined.
  5. Cover and leave overnight.
  6. Grease a pudding basin and fill with the mixture.
  7. Cover with parchment paper and foil, then steam for 6 hours.
  8. Store in a cool place until ready to serve.
  9. Reheat by steaming for 2 hours before serving.

  • Make the pudding at least a month before Christmas for best flavor.
