- 1 tbsp black pepper
- 2 tbsp fresh rosemary, chopped
- 4 cloves garlic, minced

Instructions
- Preheat oven to 450°F (230°C).
- Mix salt, pepper, rosemary, garlic, and olive oil into a paste.
- Rub the paste evenly over the prime rib.
- Place roast on a rack in a roasting pan, fat side up.
- Roast for 15 minutes, then reduce heat to 325°F (160°C).
- Cook until internal temperature reaches 120°F (49°C) for rare or 130°F (54°C) for medium-rare.
- Rest for 20 minutes before slicing.
