A refreshing pasta salad perfect for Christmas potlucks or any festive gathering. Light, colorful, and easy to prepare.
Ingredients

- 12 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
- Pour dressing over the salad and toss to coat evenly.
- Chill in the fridge for at least 1 hour before serving.
Notes
- For a richer taste, add grilled chicken or shrimp.
- Substitute feta with goat cheese if preferred.
- Best served cold.
