- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, olives, bell peppers, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
- Pour dressing over the pasta salad and toss to coat evenly.
- Garnish with fresh parsley before serving.

- You can add grilled chicken or shrimp for extra protein.
- Make ahead and refrigerate for up to 24 hours for better flavor.
