Ingredients

  • 3 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season the beef with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef on all sides until browned. Remove and set aside.
  4. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  5. Add tomato paste, thyme, and rosemary. Stir for 1 minute.
  6. Pour in beef broth and red wine, scraping the bottom to deglaze.
  7. Return the beef to the pot. Cover and transfer to the oven.
  8. Roast for 3-4 hours until the beef is tender.
  9. Remove from oven, let rest for 10 minutes, then slice and serve.
