A delicious Christmas pot roast recipe that ensures tender, flavorful meat every time.
Ingredients

- 3–4 lbs beef chuck roast
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, cubed
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C).
- Season the roast with salt and pepper.
- Heat olive oil in a Dutch oven and sear the roast on all sides.
- Remove the roast and sauté onions and garlic until soft.
- Add carrots and potatoes, then return the roast to the pot.
- Pour beef broth and Worcestershire sauce over the roast.
- Sprinkle thyme and rosemary on top.
- Cover and bake for 3-4 hours until tender.
- Let rest for 10 minutes before slicing.
Notes
- Use a meat thermometer to ensure doneness (195°F for shredding).
- For extra flavor, deglaze the pan with red wine before adding broth.
- Leftovers make great sandwiches.
