A delicious pasta salad perfect for Christmas potlucks. It’s easy to make and packed with flavor.
Ingredients

- 12 oz pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup diced bell peppers (red, yellow, or green)
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/3 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, cherry tomatoes, bell peppers, black olives, feta cheese, red onion, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and minced garlic.
- Pour the dressing over the pasta salad and toss gently to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- You can substitute feta with mozzarella or goat cheese.
- Add grilled chicken or shrimp for extra protein.
- Best served chilled.
