- 1/2 cup chopped nuts (walnuts, almonds)
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup brandy or orange juice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- Soak dried fruits in brandy or orange juice for 10 minutes.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- Whisk flour, baking powder, baking soda, and spices in a bowl.
- Fold dry ingredients into the butter mixture.
- Drain fruits and mix with nuts. Fold into the batter.
- Pour batter into the pan and bake for 45-50 minutes.
- Cool before slicing.
Notes
- For a richer taste, soak fruits overnight.
- Replace brandy with juice for an alcohol-free version.
- Store in an airtight container for up to a week.
