- 3/4 cup brown sugar
- 2 eggs
- 1 cup mixed dried fruits (raisins, currants, candied peel)
- 1/2 cup chopped nuts
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 cup brandy or rum (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Sift flour, baking powder, and spices together.
- Fold dry ingredients into butter mixture.
- Stir in dried fruits and nuts.
- Pour batter into prepared pan.
- Bake for 45-50 minutes until toothpick comes out clean.
- Cool before serving.
Notes
- Soak dried fruits in alcohol overnight for extra flavor.
- Store in an airtight container for up to a week.
- Dust with powdered sugar before serving.
