Ingredients

- 1 lb chicken thighs, boneless and skinless
- 1 cup soy sauce
- 1/2 cup brown sugar
- 3 cloves garlic, minced
- 1 inch ginger, sliced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- 1 cup broccoli florets
- 1/2 cup carrots, sliced
Instructions
- Place chicken thighs in the crockpot.
- Mix soy sauce, brown sugar, garlic, ginger, rice vinegar, sesame oil, and red pepper flakes in a bowl.
- Pour the sauce over the chicken.
- Cook on low for 6 hours or high for 3 hours.
- Add broccoli and carrots in the last 30 minutes.
- Serve over rice.
Notes
- You can substitute chicken with beef or tofu.
- Adjust red pepper flakes for more or less heat.
- Store leftovers in an airtight container for up to 3 days.
