A simple and flavorful Chinese chicken recipe made in a crockpot for easy cooking.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 cup chicken broth
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 1 cup bell peppers, sliced
- 1/2 cup onion, sliced
Instructions
- Place chicken thighs in the crockpot.
- Mix soy sauce, honey, garlic, ginger, chicken broth, rice vinegar, and red pepper flakes in a bowl.
- Pour the mixture over the chicken.
- Add bell peppers and onions on top.
- Cook on low for 4-5 hours or high for 2-3 hours.
- Shred the chicken before serving.
Notes
- Adjust red pepper flakes for desired spiciness.
- Serve over rice or noodles.
- Store leftovers in an airtight container for up to 3 days.
