- 4 chicken thighs
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Season chicken thighs with salt and pepper, then brown them in the pot for 3-4 minutes per side. Remove and set aside.
- Add onion, carrots, and garlic to the pot. Cook for 5 minutes until softened.
- Return chicken to the pot. Add potatoes, chicken broth, thyme, and rosemary.
- Cover and simmer for 30-35 minutes until chicken is cooked through and vegetables are tender.
- Serve hot with gravy from the pot.
Notes
- Use bone-in thighs for extra flavor.
- Add more broth if needed to prevent drying.
- Adjust seasoning to taste.
