- 1 cup Monterey Jack cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 4 large flour tortillas
- 2 tbsp melted butter
- 1/2 cup enchilada sauce
Instructions
- Preheat oven to 400°F (200°C).
- Mix chicken, cheese, sour cream, green onions, cumin, chili powder, and garlic powder in a bowl.
- Spoon filling onto each tortilla and fold tightly into burrito shape.
- Brush chimichangas with melted butter and place on a baking sheet.
- Bake for 20-25 minutes until golden and crispy.
- Serve with warmed enchilada sauce for dipping.
