A classic cherry pie with a flaky crust and sweet-tart filling. Perfect for any occasion.
Ingredients

- 2 cups all-purpose flour
- 1 tsp salt
- 2/3 cup cold butter
- 4–6 tbsp ice water
- 4 cups pitted cherries
- 1 cup sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp almond extract
- 1 egg (for egg wash)
Instructions
- Preheat oven to 375°F (190°C).
- Mix flour and salt. Cut in butter until crumbly.
- Add water, 1 tbsp at a time, until dough forms.
- Divide dough in half. Roll out one half for the bottom crust.
- Combine cherries, sugar, cornstarch, lemon juice, and almond extract.
- Pour filling into crust. Roll out top crust and place over filling.
- Crimp edges and cut slits in the top crust.
- Brush with egg wash.
- Bake for 45-50 minutes until golden brown.
- Cool before serving.
Notes
- Use fresh or frozen cherries.
- Chill dough for easier handling.
- Let pie cool to set the filling.
