  • 2/3 cup cold butter
  • 46 tbsp ice water
  • 4 cups pitted cherries
  • 1 cup sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp almond extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix flour and salt. Cut in butter until crumbly.
  3. Add water, 1 tbsp at a time, until dough forms.
  4. Divide dough in half. Roll out one half for the bottom crust.
  5. Combine cherries, sugar, cornstarch, lemon juice, and almond extract.
  6. Pour filling into crust. Roll out top crust and place over filling.
  7. Crimp edges and cut slits in the top crust.
  8. Brush with egg wash.
  9. Bake for 45-50 minutes until golden brown.
  10. Cool before serving.
