Instructions
- Cook brown rice in water according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in bell pepper and cook for 3 minutes.
- Mix in black beans and cumin, cook for 5 minutes.
- Season with salt and pepper.
- Serve over cooked rice.
