Ingredients

- 1 cup cooked lentils
- 1 cup grated carrots
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix dry ingredients (flour, sugar, cinnamon, baking powder, salt) in a bowl.
- In another bowl, whisk eggs, oil, and vanilla.
- Combine wet and dry mixtures.
- Fold in lentils and carrots.
- Pour batter into greased baking pan.
- Bake for 25-30 minutes until toothpick comes out clean.
- Let cool before serving.
Notes
- Use red lentils for smoother texture
- Can substitute half flour with whole wheat for extra fiber
- Store leftovers in airtight container for up to 3 days
