- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tbsp butter
- 1/2 cup shredded cheddar cheese (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Melt butter in a large pot over medium heat. Add onions and garlic, sauté until soft.
- Add diced potatoes, broth, cajun seasoning, smoked paprika, and cayenne pepper. Bring to a boil.
- Reduce heat and simmer until potatoes are tender (about 15-20 minutes).
- Use a potato masher or immersion blender to partially blend the soup for a creamy texture.
- Stir in heavy cream and simmer for 5 more minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with shredded cheddar cheese and green onions.
Notes
- For extra spice, add more cayenne pepper.
- Substitute heavy cream with milk for a lighter version.
- Store leftovers in an airtight container for up to 3 days.
