Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in diced potatoes and Cajun seasoning.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Use a potato masher to partially blend the soup.
  7. Stir in heavy cream and smoked paprika.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with cheddar cheese and green onions.

Notes

  • Adjust Cajun seasoning for more or less heat.
  • For a thicker soup, mash more potatoes.
