A rich and flavorful Cajun potato soup that’s easy to make and packed with bold spices.
Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup shredded cheddar cheese (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in diced potatoes and Cajun seasoning.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Use a potato masher to partially blend the soup.
- Stir in heavy cream and smoked paprika.
- Season with salt and pepper to taste.
- Serve hot, garnished with cheddar cheese and green onions.
Notes
- Adjust Cajun seasoning for more or less heat.
- For a thicker soup, mash more potatoes.
- Store leftovers in the fridge for up to 3 days.
