- 1 cup black-eyed peas, soaked overnight
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil

- 1/2 tsp black pepper
- 2 cups vegetable broth
- 1 tsp cumin
- 1 bay leaf
Instructions
- Rinse the soaked black-eyed peas and set aside.
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in chopped cabbage and cook for 5 minutes.
- Add black-eyed peas, vegetable broth, salt, pepper, cumin, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until peas are tender.
- Remove the bay leaf before serving.
Notes
- Soak black-eyed peas overnight for best results.
- Adjust seasoning to taste.
