Instructions

  1. Rinse the soaked black-eyed peas and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and garlic, sauté until fragrant.
  4. Stir in chopped cabbage and cook for 5 minutes.
  5. Add black-eyed peas, vegetable broth, salt, pepper, cumin, and bay leaf.

  7. Remove the bay leaf before serving.
