- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 cup granulated sugar
- 2 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1/4 tsp baking powder
- 1 tbsp powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- Mix flour, 1/4 cup powdered sugar, and butter to form a crumbly dough. Press into the pan.
- Bake crust for 15 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon zest, lemon juice, and baking powder until smooth.
- Pour filling over the baked crust. Return to oven for 20 minutes.
- Cool completely, then dust with powdered sugar. Cut into bars.

- Store in the refrigerator for up to 3 days.
