A moist and flavorful boiled fruit cake that’s easy to make and perfect for any occasion.
Ingredients

- 1 cup raisins
- 1 cup currants
- 1 cup chopped dates
- 1 cup water
- 1 cup sugar
- 125g butter
- 1 tsp mixed spice
- 1 tsp bicarbonate of soda
- 2 cups plain flour
- 2 eggs, beaten
Instructions
- Place raisins, currants, dates, water, sugar, butter, and mixed spice in a saucepan.
- Bring to a boil, then simmer for 5 minutes. Remove from heat.
- Stir in bicarbonate of soda and let the mixture cool.
- Add flour and beaten eggs, mixing well.
- Pour into a greased and lined cake tin.
- Bake at 150°C (300°F) for 1.5 hours or until a skewer comes out clean.
- Cool in the tin before serving.
Notes
- Store in an airtight container for up to a week.
- You can add nuts or glazed cherries for extra flavor.
- This cake tastes better after a day or two.
