Description

Ingredients

  • 1 cup raisins
  • 1 cup currants
  • 1 cup chopped dates
  • 1 cup water
  • 1 cup sugar
  • 125g butter
  • 1 tsp mixed spice
  • 1 tsp bicarbonate of soda
  • 2 cups plain flour
  • 2 eggs, beaten

Instructions

  1. Place raisins, currants, dates, water, sugar, butter, and mixed spice in a saucepan.
  2. Bring to a boil, then simmer for 5 minutes. Remove from heat.
  3. Stir in bicarbonate of soda and let the mixture cool.
  4. Add flour and beaten eggs, mixing well.
  5. Pour into a greased and lined cake tin.
  6. Bake at 150°C (300°F) for 1.5 hours or until a skewer comes out clean.
  7. Cool in the tin before serving.
