  • 1/2 tsp paprika
  • 2 cups water

Instructions

  1. Rinse the black-eyed peas and soak them in water for 4 hours or overnight.
  2. Drain the soaked peas and set aside.
  3. Heat oil in a pot over medium heat. Add onions and garlic, sauté until soft.
  4. Add tomatoes, salt, pepper, and paprika. Cook for 2 minutes.
  5. Add the black-eyed peas and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add sliced okra and cook for another 15-20 minutes until peas are tender and okra is soft.
