Ingredients

- 1 cup dried black-eyed peas
- 1 bunch chard, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups water or vegetable broth
Instructions
- Soak black-eyed peas overnight, then drain.
- Heat olive oil in a pot over medium heat.
- Sauté onion and garlic until soft.
- Add black-eyed peas and water or broth.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add chopped chard and cook for 10 more minutes.
- Season with salt and pepper.
- Serve warm.
