Description
A quick and easy way to prepare black-eyed peas using a pressure cooker.
Ingredients

- 1 cup dried black-eyed peas
- 3 cups water
- 1 teaspoon salt
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- Heat olive oil in the pressure cooker and sauté onion and garlic until soft.
- Add the peas, water, salt, and bay leaf to the pressure cooker.
- Seal the lid and cook on high pressure for 15 minutes.
- Allow natural pressure release for 10 minutes before opening the lid.
- Remove the bay leaf before serving.
Notes
- Soak the peas for 4 hours if you prefer a softer texture.
- Adjust salt to taste.
- Store leftovers in an airtight container for up to 3 days.
