- 2 cups dried black-eyed peas
- 4 cups water
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 smoked ham hock or ½ lb bacon, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak overnight in water.
- Drain and rinse the peas, then place them in a large pot.
- Add water, onion, garlic, ham hock or bacon, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until peas are tender.
- Remove the bay leaf and ham hock (if used), then serve hot.
Notes
- For a vegetarian version, omit the ham hock or bacon and use vegetable broth.
- Soaking the peas overnight reduces cooking time.
- Adjust seasoning to taste before serving.
