Description
A traditional dish made with black-eyed peas, believed to bring good luck in the new year.
Ingredients

- 1 pound dried black-eyed peas
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 ham hock or 4 slices bacon, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and remove any debris.
- In a large pot, combine peas, water, onion, garlic, ham hock or bacon, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours, or until peas are tender.
- Remove the bay leaf and ham hock before serving.
Notes
- Soak peas overnight to reduce cooking time.
- Serve with cornbread for a complete meal.
- Leftovers can be refrigerated for up to 3 days.
