Description

  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas and remove any debris.
  2. In a large pot, combine peas, water, onion, garlic, ham hock or bacon, salt, pepper, and bay leaf.
  3. Bring to a boil, then reduce heat to low.
  4. Cover and simmer for 1.5 to 2 hours, or until peas are tender.
  5. Remove the bay leaf and ham hock before serving.

Notes

  • Soak peas overnight to reduce cooking time.
  • Serve with cornbread for a complete meal.
