Ingredients

  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp water (as needed)

Instructions

  1. Add black-eyed peas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper to a food processor.
  2. Blend until smooth, scraping down the sides as needed.
  3. Add water, 1 tbsp at a time, until the desired consistency is reached.
  4. Transfer to a serving bowl and drizzle with olive oil if desired.
  5. Serve with pita bread, crackers, or fresh vegetables.

Notes

  • For extra flavor, roast the garlic before blending.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
