- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add the rinsed black-eyed peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until tender.
- Remove the bay leaf before serving.
Notes
- Soak the peas overnight for faster cooking.
- Add smoked turkey or ham for extra flavor.
- Serve with rice or cornbread.
