- 2 cups black-eyed peas
- 1 bunch collard greens
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
- Rinse the black-eyed peas and soak them overnight.
- Heat olive oil in a large pot and sauté onion and garlic until soft.
- Add the soaked black-eyed peas and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- While the peas cook, wash and chop the collard greens.
- Add the collard greens, salt, pepper, and smoked paprika to the pot.
- Simmer for another 20 minutes until the greens are tender.
- Serve hot.
Notes
- Soaking the black-eyed peas reduces cooking time.
- Adjust seasoning to taste.
- Serve with cornbread for a complete meal.
