- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain the peas and set them aside.
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Add the black-eyed peas, water, salt, black pepper, and paprika.
- Bring to a boil, then reduce heat and simmer for 45-60 minutes until peas are tender.
- Serve hot.

- Soaking the peas overnight reduces cooking time.
- You can add smoked turkey or ham for extra flavor.
