Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz mushrooms, finely chopped
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tsp Dijon mustard
  • 6 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the beef with salt and pepper.
  3. Heat oil in a pan and sear the beef on all sides. Remove and let cool.
  4. In the same pan, melt butter and sauté mushrooms, shallot, garlic, and thyme until dry. Cool.
  5. Spread mustard over the beef, then layer prosciutto and mushroom mixture.
  6. Roll the puff pastry around the beef, sealing edges with egg wash.
  7. Brush the pastry with egg wash and bake for 30-35 minutes.
